Appearance: Pale golden sparkling wine with generous and effervescent mousse and fine bubbles.
Aromatics: Very clean nose, with clear and fairly intense aromatic notes of golden apple and very ripe pear, highlighted by a touch of white flower honey. There’s a touch of autolysis and brioche. There’s also a floral character reminiscent of apple blossom.
Palate: The mousse is creamy and constant, making the mouthfeel textured and generous. Significant freshness – without too much bite – highlights aromas of apple pie with a touch of soft spice. There’s a certain roundness that wraps around this set of aromas – nothing ostentatious but enough to provide persistence on the finish. A mineral element, almost chalky, marks the palate. The very light impression of residual sugar gets constantly washed off by the acidity in the next sip.
