Appearance: Bright vermilion salmon with energetic and very fine bubbles

Aromatics: Bright nose that reveals itself slowly. Fruity (rhubarb, wild strawberry, groundcherry) with  delicate vegetable notes (radish and celery). Built on a fresh, young, energetic, clean and authentic frame.

Palate: Generous, long, and clean on the palate. After a few minutes in the glass, the initially flamboyant bubbles tone down and reveal a more textural aspect. The bubble is sharp, ample, and persistent. The magic of effervescence moderates the perception of residual sugar, a small amount of sweetness that provides an aromatic lift. Closer to rhubarb, groundcherry, and vegetable notes than the usual (and slightly tiresome) fruitiness of basic rosés. Acidity is well integrated and keeps the general tasting impression lively and focused, leaving on a slight bitterness finish.

There is also a focus and balance between the elements of flavour (freshness and intensity) and the aromatics (vegetable notes, rhubarb).

A wine with a specific and local personality that can stand proudly with other wines from anywhere around the world.

Pairings: Even though it’s a delicious wine for an apéro, it can also be served with fried beets, a ratatouille, kale and celery Waldorf salad, a roasted vegetable wood-fired pizza (zucchini, red bell pepper, olives, goat cheese), or a rhubarb dessert.
