Appearance: Bright and intense ruby red color

Aromatics: Full on, fragrant and explosive on the nose. Unabashedly filled with black fruit like cassis and black cherry.

Palate: On the palate, the mousse carries beautiful fruity aromatics. Notes of cassis, cherry and fresh grape juice show up, and the bubbles are very persistent. Aromatics are precise without being ostentatious. The wine is fresh, aromatic and precisely crafted without any overextraction. Precisely balanced dosage brings together aromatics, sweetness, acidity and the touch of bitterness. The wine is light, integrated and showing lovely tension, with fruit and structure reminiscent of Bordeaux and the drinkability of a Jura red – all that with bubbles on top! Very different from Australian or Italian red bubblies.

Pairings: The wine will be a wonderful pairing with duck and blueberry sausages served over braised red cabbage. It could also be matched with desserts like Black Forest cake or tiramisu.
