Appearance: Decidedly gold-coloured in the glass
Aromatics: Golden apple aromatics and significant notes of autolysis make the wine reminiscent of certain Chenin Blanc whites from the Loire. Lively and energetic palate carrying overripe apple and yeasty aromatics. The intrinsic acidity of the Frontenac allowed this wine to reach a level of ripeness that combines tension and aromatic focus. The 2018 L’Intégrale might have seemed a little timid in its youth, but it’s now fully showing its character, with Québécois tension and forward, focused aromatics.
Palate: The bubbles certainly haven’t lost any of their intensity. The wine is vinous – showing evolution – and youthful, thanks to some fresh McIntosh apple aromatics and acidity that carry a lot of energy. Acidity is precise and sharp, but fully integrated into the wine’s character.
Pairings: A wine you can drink on its own, or with a slice of brioche topped with a julienne of parsnip, carrot and McIntosh apple and some seared foie gras from Lac Brome ducks.
