Appearance: Golden yellow with persistent effervescence, it could feel a bit like a bottle-conditioned white beer.
Aromatics: Brioche and pear or apricot Danish nose, with subtle notes of very ripe golden apple, complemented by spice and a floral hint.
Palate: On the first sip, the feeling is round, with a creamy, palate-coating mousse. Once the bubbles calm down, fruity notes move forward, with fresh-picked pear character. Acidity then picks up and the tasting experience ends on a clean, nervy finish with a very light touch of bitterness not unlike that of white grapefruit, which gives extra persistence.
The combination of aromatics and freshness can be reminiscent of some chenin-based bubblies from the Loire. This sparkling wine has kept its main quality, vintage to vintage: it’s fantastically easy-drinking. It’s an excellent example of a quaffable sparkling wine.
Pairings: It’s a terrific pairing with fried calamari, served with a lemon and herb mayo. You could also consider serving this wine with a braised fennel salad garnished with poached pear and brioche croutons.
